Black Velvet If You Please

Between juggling a relationship, work, and a social life, it can sometimes be a struggle to balance everything.  I find it particularly important however to take care of oneself regardless of how hectic life may seem.  It could be easy to order take out every night especially with the eclectic variety of restaurants available to choose from, but I normally opt to cook a healthy meal filled with fresh produce.  Most importantly, since I get home late on most nights, it’s important to keep my meals simple.

Last night was a gorgeous summer evening and I was in the mood to put together something refreshing.  I found these Black Velvet Apricots recently and have been wanting to try them, so I mixed up a this simple salad to showcase this divine fruit.  The Black Velvet Chicken Salad...

Ingredients (Makes 4):

3 Black Velvet Apricots Small Red Onion 4 Cups of Arugula 3 Tablespoons of Goat Cheese 2 Chicken Breasts 2 tablespoon Honey 1/2 teaspoon of salt, pepper 1 teaspoon of Olive Oil 2 tablespoons of Balsamic Vinegar 1 1/2 tablespoon of Dried Thyme

Cook (20 minutes):

In a mixing bowl, combine salt, pepper, thyme, honey, and vinegar.  Place the chicken in the bowl and make sure it is coated evenly with the mixture.  Let it sit for few minutes (no longer than 10 minutes).In large salad bowl, cut up apricots, arugula, and onion - combine and set aside. Heat a skillet or grill, place marinated chicken and cook for 7 minutes on each side until golden brown. Take chicken off heat and slice.  Add chicken, cheese, dressing (below) to salad mixture and combine.

For dressing - In a small bowl, whisk together a tablespoon of balsamic vinegar and olive oil, a pinch of salt, pepper, and a teaspoon of honey.
