dragon fruit salad

With Chinese New Year just a little over a week away, I thought I'd dedicate my first food post of 2014 to something that brings me back to my roots.  I grew up eating these exotic fruits like lychee, dragon fruit, rambutan, and mangosteen just to name a few, and love that I can continue to enjoy them.  When I'm traveling, I tend to load up on fresh local fruit, and Hong Kong is a mecca filled with fresh fruit and vegetable markets.  Since I haven't been in the mood to cook a full meal just yet (that will have to wait till I'm back in the states), I decided to assemble this beauty. This straightforward recipe is a great wintry alternative to the traditional fruit salads, and simple to put together. Combined with the tangy "good luck fruit" also known as pomegranate and naturally sweetened with fresh orange juice, this dragon fruit makes for the perfect start to your morning.  

-- Dragon Fruit and Pomegranate Salad serves 4

2 Dragon Fruit Seeds of 1 large pomegranate Juice of 1/2 and orange

Slice dragon fruits into halves down the center. Using a large spoon, gently scoop out the center meat, keeping it in tact. Set aside the rinds. Cut dragon fruit meat into 1/2-inch cubes.

In a large bowl, gently toss together dragon fruit, pomegranate, and orange juice. Divide fruit into dragon fruit rinds. Serve and enjoy.
