Sweet and Spicy Shrimp

I’m finally back in the kitchen after five weeks of traveling. It seems to be such a foreign place these days with the lack of home-cooked meals, but the passion still lives on. Whenever I get home from a long trip, I take every opportunity to stop by the farmer’s market to stock up for the week. This weekend was no different. I picked up a few essentials including two pounds of shrimp from my favorite fish monger, threw together this simple sweet and spicy marinade, and arrived at this protein-rich meal. There’s nothing like bringing a bit of nature into your home with fresh, delicious ingredients. The fresh-squeezed taste of not-from-concentrate Simply Orange juice and the spicy, aromatic ingredients were the perfect balance for these delicate shrimp. A healthy bite to jumpstart my spring “diet”, and an easy way to dust off the frying pans to restart my kitchen inspiration.

Shrimp with Sweet and Spicy Glaze

INGREDIENTS

2 pounds of fresh shrimp

1 cup of Simply Orange juice Juice from one lemon

½ tablespoon turmeric

4 cloves garlic, finely minced

½ finely chopped red onion Crushed chili flakes

1 teaspoon of salt Flat-leaf parsley, coarsely chopped Olive oil

Wok (or similar frying pan)

Mix together olive oil, orange juice, lemon juice, chili flakes, turmeric, half of the minced garlic and salt. Place shrimp in a large bowl and pour marinade over and let sit for about 7 – 10 minutes.

Heat olive oil in a wok on medium-high heat. Add garlic, red onions, a pinch of salt, and cook until fragrant. Drop heat to medium-low and add shrimp; avoid letting excess juice into the pan. Sauté shrimp for about 7 minutes or until shrimp is pink in color. Finish with a garnish of parsley.

Serve on its own or with a bed of fresh greens.
