baked potato chips
There are several reasons why I don't buy snacks from the grocery store, and one of them includes my inability to stop once I start eating them. This somewhat embarrassing behavior follows me wherever snacks are present, so don't be surprised if you catch me elbow deep in the chip n' dip at the next party. I've long given up on correcting my snacking behavior, but have since learned to make homemade snacks using fresh ingredients.
I love making potato chips, especially when I get these colorful patriot potatoes, since they require no real recipe and in less than an hour I can get fresh oven-baked chips. I sliced up the potatoes (using my favorite kitchen tool), soaked them in salted water for 10 minutes, lightly coated them with olive oil, baked them on a baking sheet for 20-30 minutes (flipping them once) at 350 degrees, and then seasoned them with a bit of salt and herbs. These guilt-free chips are easy to make and can be served at any gathering.
