roasted balsamic rainbow carrots

Whenever I'm feeling a bit lethargic post-weekend, I do my best to incorporate fresh, whole vegetables into my diet throughout the week.  My favorite (and the easiest) way to enjoy fresh produce is roasting them - throwing a few colorful carrots onto a baking sheet, a light coat of olive oil, few pinches of salt and pepper, and just to change things up, an extra drizzle of balsamic vinegar.
