Winter Squash Soup with Gruyère Croutons

I just finalized my plans for a December trip to Los Angeles and though I'm excited to finally make a visit back home, I know my schedule is going to be packed with meetings and my meals will be far more erratic than what I'm normally used to.  So I took advantage of the last few days that brought cooler temperatures by cooking up this beautiful earthy winter soup I found here.  A mixture of acorn and butternut squash paired with crisp gruyère croutons is the way to spend a rainy day looking out my window down at the street traffic.
