baked oatmeal with fresh berries
My morning routines normally include a large serving of green juice, and on the weekends, some form of savory dish like baked eggs or avocado toast for brunch. It's rare that you'll find me ordering sweet breakfast options, but when I do it's usually a dish that includes fresh fruit.
This dish, with fresh strawberries and blackberries, was inspired by my favorite dessert -- fruit cobbler. Replaced the crumble with oatmeal, and added a touch of maple for a healthy alternative to the mundane breakfast.
Any leftovers went in mason jars for an easy grab and go breakfast.
Baked Oatmeal
3/4 cup of steel-cut oats (not instant) 2 cups almond milk 2 cups of fresh berries, fresh or frozen 1 egg 2 tsp cinnamon
Preheat oven at 350. Layer bottom of a small-medium baking dish or pan with berries.
In a medium bowl, whisk together egg, cinnamon, and milk, then fold in pats. Let oatmeal soak in mixture for a few minutes. Pour over the berries, making sure mixture is evenly spread. Bake in oven for 15-20 minutes, until top is golden brown.
Serve immediately with a drizzle of maple syrup and milk. Leftovers can be put in mason jars and refrigerated.
